Beirut Vegan Moussaka
Vegan Moussaka is a vegan spin on the beloved meaty Middle Eastern dish. Coconut milk-mashed sweet potatoes are layered atop a tomato, lentil veggie mince topped with roasted eggplant, cashew bechamel and seasoned with za'atar.
