Ras El Hanout, the king of spice blends

Ras El Hanout, translating to the boastful "head of the shop," intends to let you know that THIS is the top shelf offering of your local spice monger. Omnipresent in souqs and bazaars in Algeria, Tunisia, and especially Morocco, its name hints as its history as any merchants best offering.

Recipes can be tightly held, and vary widely even from family to family operating within feet of each other. It's easy to sample the local terroir, as blends naturally rely heavily on regional flora. And vendors pridefully use this recognizable name to showcase the best that they have to offer, meticulously designed to optimize for both flavor, aroma, and consumer experience.



Examples of some of the many the many more exotic ingredients distinguishing family blends in foreign markets today are orris root (used in high end perfumes), cubeb (used in patchouli oil), saffron (more expensive than gold by weight), and even hashish!

And while we of course stay WELL within the confines of the Colorado Health Department, some Middle Eastern merchants famously would add traces of poisonous "aphrodisiacs" like Spanish Fly, before the practice was banned in the 1990's.



We won't tell you every ingredient in Bridget's proprietary blend, but you can expect notes of coriander, turmeric, clove, cardamom, cinnamon and nutmeg accompanying each bite of tender chicken thighs, prunes, sweet potatoes, chickpeas and olives.
