Why Brick Lane?

All of Bridget's recipes are respectfully named after their location of origin, or area of inspiration. As such, one might expect our take on Chicken Tikka Masala to be named for a location in the Indian Subcontinent.

This dish, perhaps the most famous Indian dish in the United States, more likely originated a mere 50 years ago in the Bangladeshi immigrant run restaurants along Brick Lane in London's East End.



The dish was likely derived from butter chicken, a popular dish in the northern subcontinent, and modified to better fit English tastes, possibly by adding canned Campbell's Tomato Soup.

Today, the dish is usually made by marinating boneless chunks of chicken in yogurt and a masala spice mix. Tomato, paprika, turmeric and coriander are common but not required flavors. Oftentimes lamb, fish or paneer (acid-set, pressed cheese curd) make an appearance, but the common requirement is that it's spicy and served in a smothered-like manner.
