Carrot Ginger Soup has a velvety texture, made from a puree of carrots, sweet potatoes, coconut milk, garlic, cloves, peanuts, tomatoes and a fresh ginger kick.

History:  a combination of Bridget's mother's Thanksgiving ginger carrot soup recipe, and a traditional West African maafe, a spicy peanut stew originating in Mali
